Blueberry & Banana Salad

 Ingredients:

2 cups sliced “firm” bananas*
1-1/2 cups fresh blueberries
1 can (11 oz.) mandarin oranges, drained
½ cup miniature marshmallows
1 Tbsp flaked coconut
½ cup sour cream

In a bowl, combine the bananas, blueberries oranges, marshmallows and coconut.  Gently fold in the sour cream.  Refrigerate.

* Bananas should be ripe and not green


 

Blueberry And Tortellini Fruit Salad

Ingredients:

1 (9 ounce) package of Three Cheese Tortellini pasta*
1 cup fresh blueberries
1 cup sliced fresh strawberries
1 (11 ounce) can mandarin orange segments, drained
¾ cup green grapes
¼ cup sliced almonds
½ cup poppy seed dressing

Cook pasta according to directions on package; drain.  In a large bowl, add pasta and salad ingredients.  Pour dressing over salad and toss lightly; refrigerate until ready to serve.

Various other fruits such as bananas, peaches, apples and oranges may be used.
