Happy Easter!

Thanks to so many of you who called or emailed to ask us if we had survived the weather this spring. We did have a real scare one night about 9:15 pm when the weather forecasters alerted us that a tornado was heading toward us and the storm was about 10 minutes away. Of course, the first thing that I did was to go into the bedroom to wake Pearce up. I poked, punched and yelled; but all I could get out of him was a deep moan. There is a wonderfully secure closet in our house – but, of course, I had it stacked all the way up to the ceiling. I quickly cleaned it out but throwing everything into the bedroom. Once again, I went to wake Pearce up. Again – no luck. That is when I made the decision to take Faith, Hope and Nothin’ and head to safety. The closed is rather small - so you can imagine just how crowded with a Lab, a Pomeranian and a crazy cat. Needless to say, nothing happened including high winds and hail. God blessed us. I told Pearce all about the experience the next morning and he couldn’t believe that he slept thru it. Of course, I never told him that there really wasn’t room in the closet for him anyway.
It has been very cold this week. We have lost some of the plums (but not the pulots), some of the pears, and probably all of the apricots. None of the blueberries or blackberries look like they have been damaged. This really has been a strange spring so far.
Pearce and I are working hard to get ready for berry season. Our best guess (and that is all that it is – a guess) is that we will start blackberry season on Tuesday, June 2. The blueberries seem to be a little farther along that normal so we may be able to start picking them around Tuesday, June 9. Please don’t count on these dates as being a certainty. We won’t know the exact date until the very last minute.
Our canning, pickling, freezing, and drying program is scheduled for Saturday, April 18. There are still has a few slots remaining. Once the class is filled, we will take names for a waiting list and call people from that list if anyone cancels. We are going to hold the number of participants to 25 since the program will be held in our house. The cost is $10 per person or $15 for a husband and wife. The cost for lunch is $5. The class will start at 10 am and will end at 2 pm. You are certainly welcome to bring your own lunch but I can promise you a good meal if you want to eat with all of us.

The program for May is called "Beyond the Blueberry Muffin – Sweet and Savory". We will be demonstrating a number of recipes and will have some already made for you to enjoy. I plan to put all of the recipes in a folder for you – so that you can take them home and make these goodies up for your family. That program is scheduled for Saturday, May 23 and will start at 10 am and end at 2 pm. The cost of the program that day is $25 per person and we will eat our lunch from all of the prepared food. This should be a treat for everyone. Once again, the class will be limited to 25 people. Let me know as soon as you can so that I can get your name on the list. Our email address is info@txberry.com or you can call me at (903) 564-6228.
Be sure to tell your friends that WE WILL BE OPEN THIS YEAR! Pearce and I are going to keep this wonderful place going and growing until the right person comes along to buy it. A number of people have called or emailed us asking if we are going to open this summer. Somehow a rumor got out that we were already closed and we need to let everyone know that that is not true. We do have several people interested at this time but no contract yet.
I have included two great cake recipes for you to make for your family. One is for a Lemon-Blueberry Pudding Cake and the other one is a Chocolate Blackberry Pound Cake. They are both a little unusual and relatively simple to make.
